Sayer is one of Iran's highest-volume commercial date cultivars, grown mainly in Khuzestan province in the south-west of the country. It rarely gets the marketing attention that Mazafati or Piarom get, but for buyers who move dates in bulk, it's one of the most useful varieties on the price list.
The fruit is medium-sized, soft to semi-dry, and dark reddish-brown once fully ripe. Sugar content is high and the flesh is sticky rather than dry-crumbly, which is exactly why so much of the Sayer crop never reaches a retail shelf as whole fruit at all — a large share goes straight into date paste, date syrup (shireh khorma), and date vinegar production, because the texture and sugar profile suit processing better than eating out of hand.
Iranian Sayer dates are harvested from around September, with Khuzestan's warm climate giving one of the earlier harvest windows among Iran's major date-growing regions. Because the fruit is soft, it doesn't travel as well as a firmer variety like Zahedi, so shipments need proper cold-chain handling and are usually packed in smaller cartons to avoid crushing the bottom layer.
For a wholesale buyer, the questions that matter are moisture content, whether the batch is graded or ungraded, and what it's being bought for. A batch destined for paste or syrup production doesn't need the same cosmetic grading as fruit sold whole — pitted, slightly broken pieces are perfectly usable and usually cheaper per kilo. If you're buying whole Sayer dates for retail, ask for a moisture spec and check for consistent colour; overly pale batches were picked underripe and will be harder and less sweet.
Storage is straightforward: keep Sayer dates refrigerated in an airtight container, and they'll hold their texture for months. At room temperature the natural sugars can start to sweat through the skin faster than with a drier variety, so this isn't the cultivar to leave sitting in a warm store display for weeks.
If you're sourcing premium dates for a Malaysian business — retail, catering, or as a paste/syrup ingredient — it's worth comparing Sayer against the other Iranian staples before committing to a container size.
